Ingredients:
- 400 g Tenderloin
- 1 Shallot
- 4 Pickles
- 4 Piparras (mild Spanish green chili peppers)
- Whole-grain Mustard
- Hot Sauce (Tabasco/Sriracha)
- Soy Sauce
- Egg Yolk
- Extra Virgin Olive Oil (AOVE)

Finely chop the tenderloin, always using a knife. |

Finely chop the shallot, pickles, and piparras as well. |

Add everything to a bowl, and let’s move on to the seasoning. A tablespoon of whole-grain mustard, another of the piparra pickling liquid, hot sauce to taste, and a splash of soy sauce will enhance the flavor. |

Add the egg yolk, and while drizzling olive oil in a thin stream, stir vigorously to emulsify the mixture. |

Toast a brioche bun with butter and fill it with the mixture. |
